Spinach-Stuffed Salmon Fillets
Ingredients:
- 2 salmon fillets
- salt
- freshly ground black pepper
- 1/2 package chopped baby spinach
- 1 tablespoon pesto
- 1 1/2 teaspoons chopped tomatoes
- 1 1/2 teaspoons pine nuts
Preparation:
Make a slit in the middle of the fillet, making sure not to cut it all the way through. Add salt and pepper to each fillet. Combine in a separate bowl the pesto, tomatoes, pine nuts and spinach and put a third of the mixture into each fillet. Put the fillets into a broiler pan and roast them for 8 to 10 minutes in an over previously heated at 400 degrees F.
