Salmon Fettuccine

Salmon Fettuccine

Ingredients:

  • 8 ounces dry fettuccine pasta
  • 1/4 cup butter
  • 1 tablespoon all-purpose flour
  • 1 cup chopped spinach
  • 2 tablespoons capers
  • 1/4 cup chopped sun-dried tomatoes
  • 1/2 cup chopped oregano
  • 1 cup grated Parmesan
  • 1/2 pound smoked salmon, chopped
  • 1 cup milk

Preparation:
Boil a large pot of water and add a pinch of salt. Cook the fettuccine for 10 to 15 minutes until al dente, drain the pasta and rinse them. Melt the butter in a medium saucepan and add the milk. Mix in the flour until the sauce thickens and gradually add Parmesan and stir to melt the grated cheese. Add pieces of salmon into the butter sauce then the spinach, tomatoes, capers and oregano. Cook and stir for 3 minutes and serve it over the pasta.
