Nicoise Salad

Nicoise Salad

Ingredients:

  • 1/2 pound new potatoes cut in quarters
  • 1/4 cup chopped parsley
  • 1 can tuna
  • 1/3 pound fresh green beans
  • 1 cup lemon vinaigrette
  • 3 hard-cooked eggs cut in quarters
  • 3 sliced plum tomatoes
  • 1 tablespoon capers
  • 4 anchovy filets
  • 1/2 pound mixed salad greens
  • 1/4 cup pitted nicoise olives
  • 1/2 thinly sliced onion

Preparation:
Boil water into a large pot adding a pinch of salt. Add the potatoes and boil them until they are cooked, roughly about 15 minutes. Drain the potatoes and let me cool. Take a large bowl and combine the potatoes with parsley, olives, tuna, onion and green beans. Let the salad refrigerate for 2 to 4 hours, after which toss greens with vinaigrette into the bowl. Finally add the eggs, capers, tomatoes and anchovies.
