Halibut with Capers
Ingredients:
- 1 tablespoon olive oil
- 2 steaks halibut
- 1/2 cup white wine
- 1 teaspoon chopped garlic
- 1/4 cup butter
- salt
- pepper
- 3 tablespoons capers and their liquid
Preparation:
Heat in a skillet one tablespoon of olive oil. Fry the halibut steaks on both sides until they become brownish. After setting them aside, pour the wine into the pan and scrape with a spatula all the bits of fish left on the surface. After the wine reduces, add the garlic, the salt and the pepper. Then let the sauce simmer for a couple of minutes so that the flavors combine. Put the steaks back into the pan and cover them with the wine sauce. Cook it until it flakes easily and serve it immediately covered in sauce.
