Baked Red Snapper
Ingredients:
- 2 tablespoons butter
- 2 pounds red snapper fillets
- salt
- white pepper
- 2 egg whites
- 2 tablespoons chopped fresh parsley
- 1 teaspoon dried tarragon
- 3 tablespoons fresh bread crumbs
- Dijon mustard
Preparation:
Preheat oven at 375 degrees F. Spread butter on the bottom of a baking dish. Arrange the fish fillet in a single layer and sprinkle salt and pepper over them. Put them in the oven and bake for 12 minutes. Whip the egg whites until they transform into a foam. Add the parsley, tarragon and mustard. Spread the mixture over the fish, making sure the layer is about 1inch thick and spread bread crumbs over the top. Bake in the oven for 6 more minutes; if the fish flakes with a fork, then it's done.
